Whether fresh out of the pot or chilled, this easy-to-make carrot ginger soup will have your tastebuds dancing!
It’s savory with a hint of sweet with nothing but real ingredients.
Simple Carrot Ginger Soup Ingredients:
- 1 large shallot, minced
- 2 TBSP ghee, butter or oil
- 1 TBSP fresh ginger, minced
- ½ cube of vegetable bullion
- 2 lbs, peeled and chopped carrots
- 7-8 cups of water depending upon your preference for consistency
Heat ghee or oil in a large saucepan over medium heat. Add minced shallots and ginger and cook for 5 minutes. Add in chopped carrots, water, and bullion, and bring to a boil. Then simmer with cover on for about 25-30 minutes until carrots are soft. Transfer to blender and puree in batches until smooth. Return to pan and stir on low heat. Add salt & pepper to taste. Enjoy!
