Healthy & Cool Beach Bites and Beverages

Summer’s here and you’re planning on setting your bare feet on the beach. There,
you’ve got the sun, the sand, and a healthy appetite. While you’re working on your tan,
get rid of your hunger by noshing on the following tasty yet healthy beach bites and
beverages.

Almonds with Personality

Healthy foods can be less appealing due to limited taste. For example, raw almonds are
healthy but if you want to accelerate your tastebuds, sweeten (salt, spice, or smoke) the
deal. These almonds have personality.

AlmondsIngredients:

1 tablespoon water
1 large egg white
1/2 tablespoon garlic salt
1/2 tablespoon bacon salt or 1 teaspoon kosher salt
1 teaspoon smoked paprika
3/4 teaspoon ground cumin
2 dashes hot sauce
1/4 teaspoon worcestershire sauce
3/4 teaspoon cayenne pepper
1/2 teaspoon ancho chili powder
1/4 teaspoon ground white pepper
1 pound raw almonds

Directions:

-Preheat oven to 300°F. Line a pan with a cookie sheet.
-In a large bowl, combine water and egg white and whisk until foamy.-
-*Here’s where you need to be creative regarding preferences. Add garlic salt, bacon salt, and hot sauce for heat and
spice. Furthermore, mix sweet and spicy ingredients for a unique flavor.
-Whisk to combine all added ingredients.
-Add almonds; toss to coat evenly.
-Spread almonds in a single layer.
-Bake for 20 minutes; stir almond mixture and reduce oven temperature to 275°F.
-Bake another 40 minutes, or until the nuts are dry to the touch. Cool before
transferring to a container.

Icy and Tasty Slushies

Phew! The sun is hot but you can keep cool with a dash of preparation. The recipe
below yields 16 ounces of tasty slushies, so be sure to make enough for all beach bound
family members and friends.

2 cups of ice
1 cup of your favorite hint water
½ cup of your favorite fruit (strawberries, blueberries, cherries, mango, etc.)

Directions:

-Put 2 cups of ice cubes in a blender.
-Add 1 cup of water.
-Put the blender on high and blend for thirty seconds (or until ice is smooth).
-Pour slushees into mason jar, close the top, and store in beach cooler until you’re
ready to enjoy.

Scrumptious Carrot Cake Balls

Beach eating is all about combining convenience with culinary preferences. Carrot cake
is delicious but toting an entire cake to the beach is not practical. However, you can
easily pop a load of carrot cake balls into your cooler. The following makes a baker’s dozen of the small tastes of heaven.

Cake BallsIngredients:

1 cup rolled oats
1 cup medjool dates (remove pits)
3 carrots (peeled)
½ cup unsweetened coconut flakes
¼ cup cashews
¼ cup pecans
1 T brown-rice malt
¾ tsp. vanilla extract
½ tsp. ground cinnamon
Dash of nutmeg and coconut oil

Directions:

-Blend dry ingredients (rolled oats, coconut flakes, cashews, pecans, cinnamon,
nutmeg).
-Add to a bowl.
-Blend carrots into small chunks and mix with dry ingredients in bowl.
-Blend dates into glob form and add to bowl.
-Add brown rice malt and vanilla extract.
-Squeeze ingredients together into a giant ball.
-Break off small chunks and roll into balls.
-Place balls on a board lined with wax paper and put in the freezer until balls
harden (about 20 minutes).
