Not only is it beloved by those following the Paleo diet, it’s also super easy to make—essentially just toss a head of cauliflower in the food processor and pulse—and it’s a great way to lighten up all manner of meals from grain bowls to salads to enchiladas!
For those who prefer to minimize their time in the kitchen, Trader Joe’s is actually selling pre-packaged cauliflower rice, and it’s become so popular that the grocery retailer is rationing sales of the bags to two per customer at select locations.
